1 lb Chicken Breast - 2 tbsp Olive Oil
- 1 tsp Garlic Powder
- 1 tsp Paprika
- Salt & Black Pepper to taste
- 2 cups Cooked Rice (white, brown, or jasmine)
- 1 Cucumber, diced
- 1 cup Cherry Tomatoes, halved
- 1 Red Onion, diced
- 1/4 cup Parsley, chopped
- 1 cup Greek Yogurt
2 tbsp Lemon Juice - 1 tbsp Dill
Instructions
- Marinate the Chicken: Place the chicken breast in a bowl and drizzle with olive oil, garlic powder, paprika, salt, and pepper. Let it sit for at least 30 minutes.
- Cook the Chicken: Heat the grill or skillet over medium-high heat and cook the chicken for about 6-7 minutes per side, until it reaches an internal temperature of 165°F.
- Prepare the Tzatziki Sauce: In a separate bowl, combine Greek yogurt, diced cucumber, lemon juice, dill, salt, and pepper. Mix until creamy.
- Chop the Veggies: Chop the cherry tomatoes, red onion, and fresh parsley.
- Assemble the Bowls: Scoop cooked rice into each bowl and top with grilled chicken, fresh veggies, and a dollop of tzatziki.
