Scale
2 cups all-purpose flour
1/2 cup unsalted butter, softened
1/2 cup sugar
1 cup heavy cream
1 package cream cheese (8 oz), softened
1 cup powdered sugar
1 teaspoon vanilla extract
2 cups fresh strawberries, sliced
1/4 cup strawberry jam (optional)
2 tablespoons milk (optional, for consistency)
Instructions
Preheat the oven to 350°F (175°C). Grease and flour a baking dish to ensure your cake comes out easily.
Cream together the softened butter and sugar until light and fluffy.
Gradually add the flour, mixing until just combined.
Press the dough into the bottom of the prepared baking dish.
Bake for 20-25 minutes or until the crust is lightly golden. Let it cool completely.
Beat the cream cheese until smooth. Gradually add the powdered sugar and vanilla.
Whip the heavy cream until stiff peaks form, then gently fold into the cream cheese mixture.
Spread the cream cheese mixture evenly over the cooled crust.
Layer the sliced strawberries on top and drizzle with strawberry jam if desired.
Refrigerate for at least 2 hours to set before serving.
Notes
Serve with a dollop of whipped cream and a sprig of mint. Pairs well with iced tea or prosecco.
