- 6 small flour tortillas
- ½ cup granulated sugar
- 1 tbsp ground cinnamon
- ½ cup unsalted butter, melted
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- ½ cup heavy whipping cream
- 1 cup fresh or frozen strawberries, chopped
- ¼ cup granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch mixed with 2 tbsp water (cornstarch slurry)
Instructions
- Preheat your oven to 375°F (190°C).
- Mix together ½ cup granulated sugar and 1 tbsp ground cinnamon.
- Brush each tortilla with melted butter and coat with cinnamon sugar.
- Drape the tortillas over the oven rack to form taco shapes.
- Bake for 8–10 minutes until crisp and golden.
- Remove the taco shells from the oven and allow them to cool completely.
- Beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Whip the heavy cream in a separate bowl until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture.
- Simmer chopped strawberries, ¼ cup granulated sugar, and lemon juice over medium heat for about 5–7 minutes.
- Stir in the cornstarch slurry and cook until thickened, about 1–2 minutes.
