- 2 cups water or chicken broth
- 2 chicken breasts, seasoned
1 cup cherry tomatoes, halved - 1 cucumber, diced
- 1/2 cup olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
1 tablespoon lemon juice - Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa with water or broth. Bring it to a boil, then reduce the heat to low, cover, and let it simmer for 15 minutes. Once done, fluff it with a fork and set aside.
- Cook the chicken by grilling or pan-searing the seasoned breasts until cooked through (about 7-8 minutes per side). Let them rest before slicing.
- Combine the cooked quinoa, halved cherry tomatoes, diced cucumber, sliced olives, and crumbled feta cheese in a large bowl.
- Drizzle with olive oil and lemon juice. Season with salt and pepper, then toss gently to combine all the flavors.
- Assemble by topping the bowl with sliced chicken and garnish with fresh parsley. Serve immediately or store in the fridge for meal prep.
