- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 cup sugar
- 3 large eggs
- 1/2 cup lemon juice
- 1 tablespoon lemon zest
1/4 cup all-purpose flour - Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- In a mixing bowl, combine 1 cup flour, softened butter, powdered sugar, and salt. Mix until crumbly.
- Press the mixture into the bottom of the prepared baking dish to form the crust. Bake for 15 minutes until lightly golden.
- In another bowl, whisk together the sugar, eggs, lemon juice, lemon zest, and 1/4 cup flour until well combined.
- Pour the lemon mixture over the crust and bake for an additional 20-25 minutes, or until set.
- Remove from the oven and allow to cool completely.
- Dust with powdered sugar before cutting into bars and serving.
Notes
For best results, use fresh lemons for the juice and zest. Store leftovers in the fridge for up to 3 days or freeze for a month.
